Chapter 1: Equipment
The list:

Large Sieve: used for straining fruit or grain pulp from wine. (Straining bag).
Pipette: is a simple device used to transfer wine to a trail jar for testing.
Syphon: used to transfer wine from vessels to another.
Thermometer: used to measure the temperature and keep outside the fermeter for keeping wine brewing in a correct temperature.
Chapter 2: Apple Wine
Ingredients:
16 cups fruit (Apple)
200 g sugar
Filtered water
6 mg yeast
3 tablespoons honey
Step 1: wash the apple from any particles dirt. Crushing the apples and clean it again, probably every fruit got its yeast from their skin. So, you can choose to don't add yeast or you can control the yeast that you add and also you can control the flavor as you can add cinnamon or some concentrate flavor of fruit or grain as malt or rice.
Step 2: After crushing the apples, you can squeeze it and making juice from the crock, add filtered water.
Step 3: Make sure to don't kill yeast before add it to the apple juice. You can use warm water. Let the warm water with the yeast 5 min before add it to the juice only for activate yeast.
If you like your wine more sweet add more honey and 200 g brown sugar better than white.
Step 4: Fermenting the wine.
Cover the crock and store to keep bugs out . Covered crock very well and put it in the warm area 70 degrees temperature.
Stir few times a day: Every 4 hours you can uncover it and stir it for next 3 days. You will discover the mixture will bubbling as the yeast will start working into the action.
Strain and siphon the liquid.
After 3 days of bubbling. You need to strain out the solids and siphon the liquid for into your carboys. After affix the airlock to not allows the oxygen coming in and spoiling your wine. You can use a small balloon if you cannot get airlock in your area. And let the gas escape.
You can let your mixture fermented for 15 days or better one month and more. You can let it age for a great taste. Add extra honey can age it and taste it too sweet.
Step 5: Bottle the wine
You can add a campden tablet to the mixture as soon as you remove the airlock to don't transform it into vinegar. Using a brown bottles can protect your wine from the sunlight after siphoning it into the clean bottles.
Taste your wine and Enjoy it.
Chapter 3 : Red grape wine
Ingredients:
4 cups sugar
1 package dry yeast
1 L concentrate grape juice /or 5 kg grape
3 quarts cold water ad needed
Step 1:
The best taste of wine is to cooked grape after you crushed and add sugar, water in the hit for 10 min after to make sure the mixture is cold down you can put it into the fermentation's bottle.
Step 2:
You can take a cup of warm water add 2 tablespoon of honey or sugar then add dry yeast. Let it activate for 5 min then you need to add it into the mixture.
If you like to add some good flavor or wine spice. I recommend to add almond, date, cloves, cinnamon and dry grape.
After adding this flavors you can taste a special wine like your first time.
Step 3:
The next step can be the fermentation of our mixture in a warm, cool place after adding airlock or balloon into the jar within few days( 7- 15) then we will notice the balloon starting to expand and sugar turns into alcohol.
Step 4:
You can bottling your wine and drink it cold.

Chapter 4: Banana Wine
Ingredients:
900 g of sugar
1 cup of honey
2 kg bananas
4.5 liters water
Campden tablet
1 pack of yeast
Step 1:
Cutting a bananas into a small pieces. You can add it into a boil water and heating up including skins for 30 min. After, remove the pot from the heat. Let it cold down and put it into the fermenter, add yeast and sugar, the cup of honey.
Step 2:
Crushing a campden tablet and add it to the mixture. Put the airlock to the fermenter or balloon. Then, fermentation will begin a few days after this.
Step 3:
Allow the mixture to a good and warm area for 15 days to 3 months.
Step 4:
After, you can bottle the wine. Better to sit aside some few bottles for months to a couple years you will notice the sweeties banana wine which keep improving aging it.
Step 5:
Drink it cold with frozen banana or white grapes. Enjoy it !!!
Chapter 5: Rice Wine
Ingredients:
5 cups rice
4 Liters water
Packet wine yeast ball ( chiuyao, qu or jiuqu)
Step 1: Cooking the rice
Wash 5 cups of rice into a large bowl until cleaning water. Soak your rice in hot water for about an hour. After, you can use a strainer to strain the rice and remove water.
You can add your rice into a streamer, boiling water on it and let it stream around 25 min. You can taste the rice after finish cooking it if it still crunchy or hard. Then, you can remove your rice from the heat and put it into a cooking sheet and spread it in a layer to help it cool and lose the heat quickly.
Step2: Fermentation
You can start crush the yeast ball. Place it into a small bowl. Break apart the yeast ball until become a powder.
After, sprinkle it over the rice. You can use your hands or a spoon to integrate and combine the yeast with the rice. Make sure the rice is correct and cooled than room temperature.
After finishing mixing the yeast and rice together. You may start the process of storing and fermenting the rice into the container.
You may store it into a warm place keep the rice warm for a few days as low heat ( 38 degrees C).
Step 3: Tasting your wine
After a few days or one month, it become less cloudy and clear. You can drink a liquid because you will notice that liquid accumulated on the top of the container.
You can strain the mixture by using cheesecloth to collect only the liquid. You can pour out into a jar and replace it in the refrigerator for at least 2 days to make it more clear and improve better taste.
Step 4: Using you rice wine
You can use the rice wine for cooking, drink it itself and enjoy the milky taste.

Chapter 6: Watermelon Wine
Ingredients :
Packet wine yeast
Watermelon
1 kg sugar
Step 1: Making watermelon juice
Pick a large and good watermelon and ripe one. Knock the watermelon if it sounds like a hollow noise . It should be ripe and feels heavy on its size. So, you will notice a lot of water inside.
Wash and remove the rind from the watermelon. Take only the red fruit and remove the white strips.
After cutting the red fruit into slices or cubes. You may cook them. You need to place the pieces fruit in a large pot and turn the heat to medium. You should mash the slices until it's liquefied around a half-hour. After, filter the mixture by cheesecloth for getting only the juice.
Step 2: Fermentation
Add the sugar to the watermelon juice. Remove the pot from the heat when the mixture cool down add the yeast and transfer it into the fermenter and add the airlock for not entering oxygen.
Step 3: Fermentation 2
Leave the mixture for one month after fermentation start. The liquid will start bubbling. After finishing bubbling, the wine should look clear and you need to store it in the bottles in a cool place.
Step 4: Taste watermelon wine
You can add it to the cocktails or drink it itself cold.

Chapter 7: Orange Wine
Ingredients:
2 kg orange
1 kg sugar
6 g wine yeast
Cinnamon
2 lemons
4 liters water
Step 1: Orange juice
Wash the oranges and lemons, remove the skins of the fruit. Cut it into pieces and remove the seeds.
You can mash the slices of oranges and lemons by potato mashes and break them down.
Step 2: Fermentation
Adding a warm water, yeast and sugar to the fermenter, don't forget cinnamon and you mixture of juice. Cover it with airlock. Mix everything together and you will notice the fermentation start by bubbling the wine and try to choose dark and warm place. You can let your wine around one month. After, siphon it to become clear and sweet.
Step 3: Divide it to the bottles
Pour out the wine into bottles. The wine will taste better if you age it for a year.
Step 4: Taste Orange Wine
Add peppermint, cinnamon or star anise. Enjoy it!!!
Chapter 8: Kiwi Wine
Ingredients:
2 kg Kiwi
4 Liters water
2 kg sugar
Packet wine yeast
Wash your kiwis, cutting into the pieces. Putting it to the plastic bag and frozen it around 2-3 hour.
After putting your fruit into the fermenter before adding sugar and water. You can frozen it then you add it to the container or if you prefer cooked your fruit under a boil water, cold it down after you add sugar then you start fermented your wine for 15 days over one month or 6 months. Don't forget to add yeast and airlock to the fermenter.
Enjoy drink you Kiwi Wine. You can add mint and slices of lemons into your drink!!
Chapter 9: Rhubarb Wine
Ingredients:
1 gallon rhubarb
2-3 quarts water
Packet wine yeast
1kg sugar
Step 1: Rhubarb juice
Clean the rhubarb and cutting into a slices, put it a large bowl or jar, add a sugar on it for 2-3 days.
After, we get a one gallon of juice. Strain the mixture.
Step 2: Fermentation
Add the mixture to the fermenter. Don't forget to use a yeast activation method ( put the yeast into a warm water allow it bloom for 5 min before adding it to the mixture) after add the mixture juice and liquid yeast into the container.
Cover it by airlock. Let it for one month then strain the wine and siphon it to the bottles. Pu it to the refrigerator at least 2 days before you drink it.
Step 3: Taste Rhubarb Wine
Add slices of lemons and mint into your cup of wine.

Chapter 10: Mead
Ingredients:
2-3 pounds honey
4 liters water
1 orange
Cup of raisin
Packet wine yeast
Berries
Step 1:
Heat 1 gallon
